Roasted Asparagus is a delicious side dish with any meal. Marinate the asparagus ahead of time, broil it in the oven for just a few minutes!

Our local supermarket has lots of gorgeous, fresh asparagus for sale these days – and that’s a sure sign that Spring is just around the corner!

We especially love the skinny stalks of asparagus – because it’s tender and sweeter than the thicker stalks. So, when we see it at the market, we buy some!

With our latest asparagus haul, Jack started testing out some new recipes using mayonnaise in the coating – which was inspired by our popular Grampa’s Firehouse Chicken recipe.

The tangy-lemony flavors of this Roasted Asparagus are really fantastic with the asparagus flavor!

Roasted Asparagus

How do you make Roasted Asparagus?

Our Roasted Asparagus starts by combining mayonnaise, lemon juice, lemon zest, and a variety of seasonings including garlic powder, paprika, salt and pepper, as well as extra virgin olive oil. Mix together, then pour the mayonnaise mixture over cleaned and trimmed asparagus.

Let the asparagus marinate for about half an hour – then spread the asparagus on an oven rack placed over a parchment-lined sheet pan. You can keep any excess marinade for serving.

Broil on high for about three minutes, then turn each asparagus spear on the sheet pan. Broil for another three minutes or so – testing for doneness after a minute or two – and removing the asparagus from the oven once it is tender but still has some bite. (Ovens vary, as well as the thickness of your asparagus spears – so timing may vary).

Then serve your Roasted Asparagus immediately with Grampa’s Firehouse Chicken, steak tips, pork chops, or any other favorite entrée. Serve with that leftover marinade on the side.

Why did my Roasted Asparagus become mushy?

When asparagus is cooked for too long, it will become mushy. Cook your asparagus only until it’s “tender-crisp” – tender enough to bite through but it should still have some crispness to it, so you definitely want to pay attention to the timing and doneness.

Ingredients

1 bunch asparagus

Marinade

1/2 cup mayonnaise

2 tablespoons lemon juice, freshly squeezed

1 teaspoon lemon zest

1/4 teaspoon garlic powder

1/2 teaspoon paprika

1 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

3 tablespoons extra virgin olive oil

Instructions

  1. Rinse, then break or cut the thick hard stalk ends off the asparagus. Discard ends. Place asparagus into a shallow container.
  2. Mix all marinade ingredients and pour over asparagus and let sit 30 minutes.
  3. Line a sheet tray with parchment paper to catch drips and place a rack over parchment, then spray the rack with pan spray.
  4. After the asparagus marinates for 30 minutes, lay out onto rack and turn on broiler. Reserve marinade for serving.
  5. Broil close to the broiler for about three minutes per side. Broilers are different so this time may be more or less depending on your broiler. Ours is pretty robust so three minutes was plenty.
  6. Serve with the leftover marinade on the side.
