1 bunch asparagus
½ cup mayonnaise
2 tablespoons lemon juice, freshly squeezed
1 teaspoon lemon zest
¼ teaspoon garlic powder
½ teaspoon paprika
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
3 tablespoons extra virgin olive oil
Rinse, then break or cut the thick hard stalk ends off the asparagus. Discard ends. Place asparagus into a shallow container.
Mix all marinade ingredients and pour over asparagus and let sit 30 minutes.
Line a sheet tray with parchment paper to catch drips and place a rack over parchment, then spray the rack with pan spray.
After the asparagus marinates for 30 minutes, lay out onto rack and turn on broiler. Reserve marinade for serving.
Broil close to the broiler for about three minutes per side. Broilers are different so this time may be more or less depending on your broiler. Ours is pretty robust so three minutes was plenty.
Serve with the leftover marinade on the side.
