Roast Beef & Cheddar Sliders have thinly sliced roast beef topped with a creamy cheddar cheese sauce as well as Arby’s sauce. The slider rolls are toasted with everything bagel seasoning on top for an extra zesty taste.
Game Day Party Roast Beef and Cheddar Sliders
Anytime we host a game day party, we like to serve a wide variety of hearty ‘finger foods’ to satisfy everyone’s different tastes and food preferences. Our Roast Beef and Cheddar Sliders are always a crowd favorite.
Tender sliced roast beef is pilled up on soft slider rolls with two kinds of sauce – a creamy cheddar cheese sauce and our copycat Arby’s sauce. (It tastes just like the sauce served at the restaurant!)
After assembling the sliders, we brush the tops of each with butter, add a sprinkle of everything bagel seasoning, and bake it in the oven until toasted and warmed through.
These sliders are easy to make and among the first to get eaten at every party.

Key Ingredients & Substitutions
- Roast Beef – Buy a quality deli-style rare roast beef (we like Boar’s Head brand). Ask the deli staff to shave the meat into very thin slices. Or – if you are ambitious – cook a Top of the Round Roast and slice it super thin yourself.
- Beef Stock – Canned, boxed, or homemade beef stock.
- Worcestershire Sauce
- Slider Rolls – There are many varieties of slider rolls available at the supermarket. We chose potato slider rolls because they are very soft and have a great texture.
- Cheese Sauce – Made from butter, all-purpose flour, whole milk, seasonings, and shredded sharp white cheddar cheese.
- Arby’s Sauce – See our Copycat Arby’s Sauce recipe here. You can also use a bottled BBQ sauce and add a little cider vinegar and water, or you can even buy bottled Arby’s Sauce here or at some supermarkets.
- Everything Bagel Seasonings – Mix up a batch of our homemade Everything Bagel Seasoning here or buy a jar.
- Butter – For the tops of the rolls.

- 9×13-inch Casserole Dish
- Mesh Strainer
- Box Grater – To shred the cheese.
- Pastry Brush
- Parchment Paper Sheets
- Foil
How do I make Roast Beef & Cheddar Sliders?
- Mix the homemade Arby’s Sauce by following this recipe.
- Make the cheese sauce.
- Lay out roll bottoms in a 9×13-inch casserole dish. Smear with the Arby’s sauce.
- Heat beef stock with Worcestershire sauce. Add shredded roast beef, then immediately drain. (You don’t want the roast beef to sit in the hot broth; it will start to cook.)
- Pile the roast beef on the prepared roll bottoms.
- Spoon cheese sauce over the roast beef.
- Place roll top on each slider. Brush with butter, then sprinkle on Everything Bagel Seasoning.
- Cover with parchment, then foil and bake for 15 minutes to heat through. Remove the parchment paper and foil and bake another 10 minutes, then broil to brown the roll tops. (Be sure to watch as you broil – you don’t want to overdo it.)
- Brush tops with more butter if desired.
- Serve sliders with more of our Copycat Arby’s Sauce and extra cheese sauce on the side.
Cooking Tip
Most online recipes use Hawaiian rolls for sliders. We were planning that as well until these potato rolls caught our eye. We actually like them better for this recipe! The Hawaiian rolls (while very delicious) add a sweet flavor, and we felt that would take away from the other savory, zesty flavors in this recipe.
Frequently Asked Questions
- Can I make Roast Beef and Cheddar Sliders ahead of time? You can make the Arby’s and cheese sauces ahead of time and get everything ready to be assembled. But we suggest you assemble right before baking.
- How do I store leftovers? Store refrigerated for up to three days. You should ideally separate the roll from the meat while storing so that the bread doesn’t get soggy.
- How do I reheat leftovers? If you separate the meat from the roll, then you can warm the meat and cheese in the microwave (don’t overheat) and place back on the roll.
- Can I freeze? No, these sliders will not freeze well.

Ingredients
1 1/2 pounds shaved rare roast beef
2 cups of beef broth or stock (canned, boxed or homemade is fine)
3 tablespoons Worcestershire sauce
Cheese sauce
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup whole milk
1/4 teaspoon kosher salt
1/4 teaspoon white pepper
1/4 teaspoon dry mustard
Few grinds nutmeg
1 1/2 cups shredded sharp white cheddar cheese
Other Ingredients
Arby’s Sauce, see our copycat recipe here, or buy bottled
One dozen slider rolls
2 tablespoons butter, melted
1–2 tablespoons everything bagel seasoning
Instructions
- Remove the roast beef from the refrigerator while you prepare the rest of the ingredients.
- In a medium saucepan, place beef stock and the three tablespoons of Worcestershire sauce. Do not heat yet.
- Make the cheese sauce by heating the milk in a small saucepan or in the microwave.
- In a medium saucepan, melt the butter and add the flour and stir over medium-to-medium low heat for three minutes.
- Whisk in the hot milk a third at a time and whisk until smooth.
- Add the salt, pepper, dry mustard, and nutmeg and whisk. Then add in the shredded cheddar and whisk until creamy. Remove from heat.
- Prepare Arby’s Sauce, per our recipe.
- Heat the oven to 350 degrees F.
- Heat the beef stock mixture to boiling.
- Place the bottoms of 12 slider rolls into a 9×13-inch casserole dish.
- Spoon a little Arby’s sauce over each one to cover the roll bottoms.
- Add the shaved roast beef to the beef stock mixture and remove from heat.
- Immediately pour the beef and stock into a strainer. (The liquid will not be needed further. Discard or freeze for other future recipes)
- Divide the warmed beef between the 12 prepared roll bottoms.
- Spoon a few tablespoons of cheese sauce over the beef and cover with roll tops. Save what is left to serve on the side.
- Brush roll tops with some of the melted butter and sprinkle bagel seasoning over the butter.
- Cover with parchment and foil and bake for 15 minutes. Remove parchment and foil and bake for ten more minutes. Place under broiler for a minute or two to brown the tops further then brush with the remaining melted butter.
- Serve two per portion, with additional cheese sauce over beef and Arby’s sauce on the side.

Okay, the flavors were excellent but the bottom buns were so soggy! I followed the recipe to a T…any suggestions? Definitely going to give this another try because it was a hit other than that!

Hi Nicole – Just make sure that you drain the beef very well after dipping in the beef stock/worcestershiire sauce mixture. Hope that helps!
