Roast Beef & Cheddar Sliders

Roast Beef & Cheddar Sliders have thinly sliced roast beef topped with a creamy cheddar cheese sauce as well as Arby’s sauce. The slider rolls are toasted with everything bagel seasoning on top for an extra zesty taste.

Ingredients

1 1/2 pounds shaved rare roast beef

2 cups of beef broth or stock (canned, boxed or homemade is fine)

3 tablespoons Worcestershire sauce

Cheese sauce

2 tablespoons butter

2 tablespoons all-purpose flour

1 cup whole milk

1/4 teaspoon kosher salt

1/4 teaspoon white pepper

1/4 teaspoon dry mustard

Few grinds nutmeg

1 1/2 cups shredded sharp white cheddar cheese

One dozen slider rolls

2 tablespoons butter, melted

12 tablespoons everything bagel seasoning


Instructions

  1. Remove the roast beef from the refrigerator while you prepare the rest of the ingredients.
  2. In a medium saucepan, place beef stock and the three tablespoons of Worcestershire sauce. Do not heat yet.
  3. Make the cheese sauce by heating the milk in a small saucepan or in the microwave.
  4. In a medium saucepan, melt the butter and add the flour and stir over medium-to-medium low heat for three minutes.
  5. Whisk in the hot milk a third at a time and whisk until smooth.
  6. Add the salt, pepper, dry mustard, and nutmeg and whisk. Then add in the shredded cheddar and whisk until creamy. Remove from heat.
  7. Prepare Arby’s Sauce, per our recipe.
  8. Heat the oven to 350 degrees F.
  9. Heat the beef stock mixture to boiling.
  10. Place the bottoms of 12 slider rolls into a 9×13-inch casserole dish.
  11. Spoon a little Arby’s sauce over each one to cover the roll bottoms.
  12. Add the shaved roast beef to the beef stock mixture and remove from heat.
  13. Immediately pour the beef and stock into a strainer. (The liquid will not be needed further. Discard or freeze for other future recipes)
  14. Divide the warmed beef between the 12 prepared roll bottoms.
  15. Spoon a few tablespoons of cheese sauce over the beef and cover with roll tops. Save what is left to serve on the side.
  16. Brush roll tops with some of the melted butter and sprinkle bagel seasoning over the butter.
  17. Cover with parchment and foil and bake for 15 minutes. Remove parchment and foil and bake for ten more minutes. Place under broiler for a minute or two to brown the tops further then brush with the remaining melted butter.
  18. Serve two per portion, with additional cheese sauce over beef and Arby’s sauce on the side.
