Chile Colorado Burritos have zesty beef and rice, refried beans and melted cheese – all wrapped up in a flour tortilla.
Our Chile Colorado Burritos combine three of our favorite recipes into one fantastic burrito that rivals the ones served at any Mexican restaurant.
These burritos are great for Tex-Mex night at home – or wrap them up, and eat them on the go.
How do you make Chile Colorado Burritos?
It all starts with making a batch of our Chile Colorado – you can see that recipe right here. Chile Colorado (which gets it’s name from the Spanish word for ‘colored red’ – not the state of Colorado) has super tender chunks of beef smothered in a deliciously rich deep red sauce made from dried chiles. We shred the beef after it’s cooked – which makes it easier to eat in the burritos.
While the Chile Colorado cooks, you’ll also prepare this Mexican Rice recipe. It’s a zesty, long-grain white rice recipe with a nice kick of heat thanks to the addition of jalapenos, chili powder, and hot sauce. Fresh lime juice, cilantro and chopped scallions add fresh flavor too.
We also cooked up a batch of our homemade Refried Beans – creamy, smoky mashed beans with an unexpected ingredient that adds fantastic flavor to the dish. (See the recipe here.) If you prefer, you can swap in your favorite canned refried beans to save a little prep time.
Lastly, shred some Monterey Jack Cheese – then you are ready to assemble your Chile Colorado Burritos.
How to assemble a burrito
Just above is a graphic that shows you the steps to assemble your Chile Colorado Burritos – and we provide more details in the recipe card below too. You’ll lay down a flour tortilla, spread some refried beans, sprinkle on some shredded Jack cheese, add rice and shredded beef, then roll.
You can wrap your burritos in foil for easier eating, or for taking your Chile Colorado Burritos on the go – just like your favorite Mexican restaurant!
Alternately – for more of a ‘smothered’ burrito – you can line a baking dish with the rolled tortillas, then spoon the leftover sauce from preparing your Chile Colorado over the top, along with more Jack cheese. Bake in the oven until hot and bubbly.
Can I make it ahead of time?
Yes – you can cook the Chile Colorado, Mexican Rice and Refried Beans ahead of time. Just be sure to heat each dish back up before assembling your burritos.

Chile Colorado Burritos
Ingredients
1 prepared recipe Chile Colorado, meat shredded
1 prepared recipe Mexican Rice
1 prepared recipe Refried Beans
10” flour tortillas, package of 8
1 pound (16 ounces) Monterey Jack Cheese, shredded
Instructions
Prepare the Chile Colorado, Mexican Rice and Refried Beans. While the recipes can be made ahead of time, each should be heated and laid out in bowls before assembling your burritos.
Place a flour tortilla down and spread ¼ cup of the hot refried beans across the center.
Add 1/3 cup of shredded jack cheese.
Add ½ cup of the shredded hot Chile Colorado.
Top with about 1/3 cup of hot Mexican rice.
Fold the side closest to you forward, then with both hands, fold the left and right in towards the center and flip forward over the exposed end, tucking any filling in with your fingers as you fold forward.
Wrap each in foil, cut in half and serve.
Depending on how full you fill your burritos, you may or may not have leftover beef, beans and rice. Feel free to serve any extras on the side, or enjoy as leftovers the next day.
