One of my New Year’s Resolutions has been to eat more vegetables – and one of the best ways I know to accomplish that is to eat more salads! These salads are sensational indeed. 🙂 My favorite is probably BBQ Salmon and Crispy Chickpea Salad, it looks really delicious, since I’m a hige salmon fan. 🙂

Love this list, pinned! We eat salads all the time and my husband brings one to work almost every day but it’s tough to keep it interesting. On a side note, Andrea is correct, it should be healthful- but I probably would have said healthy too!

I love these salads, and I love your blog! One question, though, for you and anyone else who cares to comment — whatever happened to the work “healthful”? I certainly recall being reprimanded by high school English teachers (who were right) that “healthy” was applied to people, regarding their personal physical/mental/emotional status. Things that promoted good health, such as these salads, were “healthful.” Have we discarded that word? 🙁

Thanks for your comment Andrea and you raise a great point! It prompted me to look in the dictionary (Merriam-Webster online) and one of the current definitions for healthy is ‘good for your health’ so I think that would apply to our use in categorizing these recipes… It is very interesting to see how the English language evolves over time! Thank you for taking the time to write to us and I’ll be curious to see what any of my other readers think about this too! Martha
