This fantastic Strawberry Salad with Chicken, Arugula and Sugared Almonds is on regular rotation at our house – in fact, we are often asked to bring it for potlucks and other occasions.
The combination of tender fresh salad greens, peppery arugula, cooked chicken, and sweet fresh strawberries is perfectly complemented by a tangy-sweet honey mustard dressing and a sprinkle of our crunchy Sugared Sliced Almonds on top. This salad is SO good!

- Strawberries – Fresh strawberries are the only way to go, so don’t be tempted to swap in frozen berries. It just won’t be the same.
- Crisp Salad Greens – We used Little Leaf brand Baby Crisp Green Leaf lettuce in our salad today, but any mix greens or baby lettuce will work in this salad.
- Arugula – Please don’t skip the arugula in this salad! The fresh, peppery bite balances the sweetness of the strawberries and nuts, and it really adds a special flavor to this salad.
- Chicken – Any cooked chicken will do in this salad, and a store-bought rotisserie chicken makes this salad easy to prepare. You can also skip the chicken if you want, but the protein makes this salad a complete meal.
- Honey Mustard Dressing – Here’s a link to our homemade version, or use your favorite bottled brand. (Ken’s Steak House Honey Mustard dressing is one of our favorites when we don’t have time to prepare our own.)
- Sugared Sliced Almonds – See our quick and easy recipe here. These nuts totally make the salad – so don’t be tempted to skip them either.

How do I make Strawberry Salad with Chicken, Arugula and Sugared Almonds?
- Clean, trim and slice the fresh strawberries.
- Add salad greens and arugula to the mixing bowl. Add the sliced strawberries to the bowl as well.
- Cut the chicken into bite-sized pieces. Add the meat to the salad bowl.
- Pour the dressing over the salad greens, strawberries and chicken, then gently toss to coat completely.
- Transfer the salad onto a serving platter.
- Sprinkle the top of the salad with the sugared almonds.
- Serve immediately.
Chef’s Tip –
We find it easier to dress the salad in a large mixing bowl, rather than directly in a serving bowl or on a platter.

Ingredients
12 ounces fresh strawberries, sliced
4 ounces Baby Crisp Green Leaf lettuce (we used Little Leaf brand)
2 cups arugula
2 cups cooked chicken (picked from a small store-bought rotisserie chicken, or roast or poach your own chicken)
1/4 cup honey mustard dressing (make our homemade recipe, or buy Ken’s Steak House brand)
1/4 cup Sugared Slices Almonds
Instructions
