Strawberry Salad with Chicken, Arugula and Sugared Almonds

As written, this recipe makes two dinner-sized salads.

Ingredients

12 ounces fresh strawberries, sliced

4 ounces Baby Crisp Green Leaf lettuce (we used Little Leaf brand)

2 cups arugula

2 cups cooked chicken (picked from a small store-bought rotisserie chicken, or roast or poach your own chicken)

¼ cup honey mustard dressing (make our homemade recipe, or buy Ken’s Steak House brand)

¼ cup Sugared Slices Almonds


Instructions

  1. Clean, trim and slice the fresh strawberries.
  2. Add salad greens and arugula to the mixing bowl. Add the sliced strawberries to the bowl as well.
  3. Pick and cut the chicken into bite-sized pieces. Add the meat to the salad bowl.
  4. Pour the dressing over the salad greens, strawberries and chicken, then gently toss to coat completely.
  5. Transfer the salad onto a serving platter.
  6. Sprinkle the top of the salad with the sugared almonds.
  7. Serve immediately.
