Our delicious Slow Cooker Buffalo Chicken Chili couldn’t be easier to make! Just add ground chicken or turkey, hot sauce, beans, seasonings, and vegetables to a slow cooker and let it cook.

Super Easy, Super Delicious Buffalo Chicken Chili
I can’t think of a better way to feed a hungry crowd at a game day party than this easy Slow Cooker Buffalo Chicken Chili! It has all of the same zesty flavors as classic Buffalo Wings – but in a thick and hearty chili.
In addition to the delicious flavors, this chili couldn’t be easier to make. It’s truly a “dump and go” recipe – just pour the ingredients into a slow cooker, stir it up, and set it to cook. Then let the slow cooker do all of the work.
Just before serving, you’ll stir in some crème fraiche (or sour cream) to the cooked chili to add richness and creaminess. Then ladle into bowls and sprinkle your favorite toppings over each portion.

Key Ingredients & Substitutions
- Ground Chicken or Ground Turkey – While our photos show this recipe made with ground chicken, you can also use ground turkey. Ground chicken cooks down to a more finely textured chili, while ground turkey has a more substantive texture and bite. (We recommend Shady Brook Farm brand ground turkey if you can find it.)
- Franks RedHot – This sauce is really the gold standard for achieving the original Buffalo chicken flavor. While you can buy other cayenne pepper-based sauces, the Franks brand is really the best.
- Salted Butter – The fat from the butter enhances the hot sauce.
- Salsa – We added a jarred chunky salsa to our chili as well, for additional heat and flavor. You can choose mild, medium, or spicy salsa to suit your tastes.
- Taco Seasoning – You can make your own following this recipe, or buy a pre-made taco seasoning mix. Most taco seasonings include corn flour in the mix which also helps thicken the chili.
- Beans – We used canned Cannellini beans as well as kidney beans.
- Other ingredients – Yellow onion, garlic, celery, green bell pepper.
- Crème Fraiche – Or sour cream, this gives the chili a creamy texture. While crème fraiche is similar in consistency to sour cream, it has a milder flavor. Swapping in sour cream instead will introduce a slightly tangy flavor to your finished chili.
- Toppings when Serving – Sour cream, corn chips, crumbled blue cheese, shredded pepperjack cheese, or any other toppings you like to add to your chili.

Tips & Tricks
- Note that we took some shortcuts in this recipe – such as jarred salsa and a taco seasoning mix – just to make this recipe easier. However, if you prefer to cook fully from scratch, you can make a homemade salsa recipe and a homemade taco mix instead.
- Pour all the ingredients into the slow cooker, then mix to incorporate with a wooden spoon before cooking. This will ensure that the chili cooks evenly.

Ingredients
8 tablespoons of salted butter, melted
2 pounds ground chicken or turkey
3/4 cup Frank’s RedHot sauce
2 cups yellow onion, diced
1 large green bell pepper, trimmed and diced
2 stalks of celery, diced
2 medium garlic cloves, minced
1 one-ounce packet taco seasoning
1 24-ounce jar medium heat chunky salsa (3 cups)
1 19-ounce can kidney beans, drained
1 19-ounce can Cannelloni beans, drained
1 8-ounce tub crème fraiche (or make your own)
Instructions

Place all ingredients, except the crème fraiche and the toppings into a large slow cooker and stir to combine.

Cover and cook on low for 4-6 hours (or on high for 2 to 3 hours) or until the vegetables are tender.

Stir in Crème Fraiche before serving.
