Watermelon Berry Smoothies (and Popsicles) - A Family Feast

A few weeks ago, we hosted our annual end-of-the-school year kid’s party. Afterwards, we had quite a bit of leftover watermelon and other mixed fruit from our party buffet. Whenever something like this happens – and we know that we won’t be able to eat all of that fresh fruit before it starts to go bad – we cut the fruit into chunks, then freeze it so we can make recipes like today’s Watermelon Berry Smoothies and Popsicles!

Watermelon Berry Smoothies (and Popsicles) - A Family Feast

These Watermelon Berry Smoothies and Popsicles are fruity, as well as thick and creamy thanks to the addition of Greek yogurt and cashews (you’ll want to soak the cashews in water for a few hours before blending). A little bit of agave nectar adds a touch of sweetness to the mix – but if your fruit blend is already sweet enough, feel free to leave that out.

We used mostly watermelon and strawberries in today’s Watermelon Berry Smoothies and Popsicles – you really can use any mix of fresh berries or other frozen fruit you’d like. Simply blend all of the ingredients up – and you’ll have a wonderful smoothie for breakfast or a healthy dessert.

And – to make Watermelon Berry Popsicles – simply pour the blended mixture into popsicle molds and freeze until firm. Enjoy!

  1. Oh my! The addition of nuts would be awesome. Never tried that out. The smoothie would not make it into the freezer.
