French Dip Pot Roast Sliders

Serve these easy French Dip Sliders at your next party! They have the same delicious flavors of your favorite French Dip Sandwich but served on slider rolls.

The smaller portions are perfect for serving as an appetizer at a party, and the smaller sandwich size makes them easier to eat.

These French Dip Pot Roast Sliders are made with leftovers from our Slow Cooker Chuck Roast recipe, but any pot roast recipe will work. We topped each slider with caramelized onions and provolone cheese, then used the cooking liquid from the pot roast to make the au jus for dipping.

What is a French Dip?

It’s a hot roast beef sandwich, typically served on a toasted French baguette with a side of au jus (pan drippings with beef stock). Before taking a bite of the sandwich, you dip it in the au jus.

French Dip sandwiches are typically served with caramelized onions and melted cheese.

Despite the name, French Dip sandwiches are an American creation, with the name referring to the crusty French bread that easily soaks up the au jus. The sandwich was first served in the early 1900’s in Los Angeles, California.

Prepared recipe for Slow Cooker Chuck Roast

1 tablespoon Worcestershire Sauce

1/2 cup red wine, such as Merlot or Carbernet

16 slider rolls

1 cup caramelized onions

8 slices provolone cheese cut into quarters, or other favorite cheese

2 tablespoons melted butter, to brush on roll tops

Instructions

  1. Prepare Pot Roast in slow cooker according to this recipe.
  2. While the beef is cooking, make the caramelized onions and set aside.
  3. Remove beef from slow cooker and set aside to set up while you prepare the au jus.
  4. Skim off the fat that floats to the top of the cooking liquids and discard. Then add half cup of wine and the Worcestershire sauce.
  5. Heat the au jus and strain into individual ramekins or small bowl to be served with sliders.
  6. Split the slider rolls and dry toast on a griddle. (Do not use any fat so the toasted roll can easily absorb the Au Jus.)
  7. Turn on oven broiler.
  8. Lay out the bottom slider rolls onto a parchment lined small sheet tray.
  9. Cover each toasted roll bottom with hot sliced pot roast, two provolone quarter slices, and a tablespoon of caramelized onions.
  10. Place sheet tray under the broiler just long enough to melt the cheese. (Be sure to watch it as it broils to avoid burning.)
  11. Remove from broiler and place slider roll top over the meat and cheese. Brush melted butter over each top and serve immediately with the Au Jus for dipping.

  1. Can I make French Dip Pot Roast Sliders ahead of time?  Yes, you can prepare the beef the day before you plan to serve the sliders. Then store the meat and juices in the refrigerator in a covered container. When ready to assemble your sandwiches, reheat the meat and juices in a pan on the stove.
