Today is the first day of school for our 10-year-old – so that means getting back into the school time routine!

Early morning wake-up calls…a quick breakfast…packing up lunch before rushing out to the school bus.  Then – after school activities, homework, dinner, and (for us) swim team practice three nights a week.

Turkey Pinwheel Bites

Ingredients

4 nine-inch wraps (choose soft pliable wraps)

1/8 cup cream cheese

1/4 cup mayonnaise

1/2 pound deli turkey sliced thin (approximately 8 slices)

3/4 cup shredded carrots (about 12 medium carrots)

3/4 cup shredded iceberg lettuce

Instructions

  1. Lay out one wrap and spread cream cheese along the top edge (about an inch in width). This will be used to seal the wraps and add some sweetness.
  2. Spread the mayonnaise on the remaining surface of the wrap.
  3. Lay out two turkey slices, covering the bottom half of the wrap.
  4. Sprinkle carrots and lettuce down the center of the turkey side to side.
  5. Starting on the side closest to you, roll the wrap into a tight roll finishing with the edge with the cream cheese.
  6. Trim off each end and cut into seven or eight 1-inch thick slices. Turn each slice on its side for the pin wheel.
