To make this delicious meal, leftover roasted turkey and gravy are spooned over crispy, sautéed diced potatoes, then topped with fresh cheese curds that melt from the heat of the hot gravy – very similar to the popular Canadian dish called poutine.

    1. Hi Katie – Cheese curds are basically solid pieces of the curdled milk from the cheese-making process. We found ours at Whole Foods but other supermarkets may sell them too (typically sold in a plastic container in the gourmet cheese section). If you can’t find them, you could cut cheddar into small cubes – it won’t be exactly the same texture as the curds, but a close alternative in a pinch. Hope that helps!
