One of my New Year’s Resolutions has been to eat more vegetables – and one of the best ways I know to accomplish that is to eat more salads! These salads are sensational indeed. 🙂 My favorite is probably BBQ Salmon and Crispy Chickpea Salad, it looks really delicious, since I’m a hige salmon fan. 🙂
Love this list, pinned! We eat salads all the time and my husband brings one to work almost every day but it’s tough to keep it interesting. On a side note, Andrea is correct, it should be healthful- but I probably would have said healthy too!

I love these salads, and I love your blog! One question, though, for you and anyone else who cares to comment — whatever happened to the work “healthful”? I certainly recall being reprimanded by high school English teachers (who were right) that “healthy” was applied to people, regarding their personal physical/mental/emotional status. Things that promoted good health, such as these salads, were “healthful.” Have we discarded that word? 🙁

It prompted me to look in the dictionary (Merriam-Webster online) and one of the current definitions for healthy is ‘good for your health’ so I think that would apply to our use in categorizing these recipes… It is very interesting to see how the English language evolves over time!
