Our Shaved Brussels Sprouts with Bacon is the answer! Just use a mandoline (this inexpensive handheld mandoline works perfectly) to shave your Brussels sprouts into very thin slices.

Next, fry up some chopped bacon. Then use the rendered bacon fat to sauté the Brussels sprouts shavings until tender. Toss the cooked bacon with the cooked sprouts – plus a little bit of salt and pepper to taste – and you’re done.

Ingredients

1 1/2 pounds Brussels sprouts (larger sprouts are easier to shave, but smaller sprouts will also work fine)

12-ounce package bacon (we used apple wood)

Non-stick pan spray

1 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

Instructions

  1. Using a mandoline on the setting that cuts 1/8th-inch slices, hold the stem, slice all of the Brussels sprouts and discard the stems. Set shavings aside.
  2. Cut the bacon into pieces by slicing the whole 12-ounce slab of slices in half, then stack and slice.
  3. Heat a large sauté pan over medium high heat and once hot, spray* with pan spray. (*Pull pan off flame before spraying pan.)
  4. Add bacon and cook until just short of crisp, about 5-8 minutes.
  5. Use a spider or slotted spoon and remove the bacon to a bowl or plate.
  6. Pour off all but ¼ cup of the bacon fat.
  7. Add the shaved sprouts and sauté about ten minutes or until your desired doneness. We like them a little underdone so ours were cooked in eight minutes.
  8. Add the reserved bacon, salt and pepper and cook just to heat.
  9. Serve immediately.

  1. Make this every Christmas and love this recipe ! I need to make these for a pot luck and unfortunately there is not a kitchen to warm them up. What would be the best way to keep them warm?

    1. Without knowing how far you need to travel Joann – I suppose you could put them in a hot casserole dish wrapped in foil or an insulated carrier. Pyrex also sells portable hot and cold packs – similar to an ice pack, but you microwave it and put it with your food to keep it hot.   2. This has become my new favorite way to eat brussels sprouts. We make several other recipes, but all just slice rather than shave the brussels sprouts. The flavor of the brussels sprouts is milder when shaved. I fried up some leftovers the next morning as a hash for brunch, and served a runny over easy egg on each serving. So good.

    I used my food processor to slice the sprouts as I have a habit of cutting myself on mandolins.
    This is such a delicious recipe. Ever since I retired I will eat vegetables for breakfast, lunch and dinner.

    I made this and I ate it for my dinner! I used my food processor to slice the sprouts. I added the bacon and seasonings. This is by far a wonderful, easy recipe.
