Our chopped Detox Salad tastes just like the version served on the salad bar at Whole Foods Market. It’s also a great way to eat more veggies!
Healthy and Delicious Fresh Vegetable Salad
When we’re out running errands, we sometimes stop for lunch at the Whole Foods Market salad bar. It’s a quick and healthier choice than some other restaurant options, plus there is always a delicious variety of foods to choose from.
On my salad, I always include a big spoonful of their Detox Salad in my to-go container – it has a variety of chopped vegetables, raisins, shelled sunflower seeds, parsley and lemon, all tossed in a light and slightly sweet dressing. (Plus – this is a great way to eat more vegetables!)
After our last visit, I suggested to Jack that we try recreating it at home. Using the ingredients card as a starting point, I think we’ve come very close to making a true copycat recipe of the Whole Foods Detox Salad.
Key Ingredients
- Fresh Broccoli –Cut the broccoli florets into small bite-size pieces.
- Fresh Cauliflower florets – Cut the cauliflower florets into small bite-size pieces too.
- Shredded Carrots – Use the fine shred side of a box grater.
- Raisins
- Sunflower Seeds – You’ll want the shelled sunflower seeds for this recipe.
- Fresh Italian Flat-Left Parsley
- Lemon Zest
- Lemon Juice
- Kosher salt and black pepper
- Dressing – Raisins, sunflower seed oil or grapeseed oil, and water is blended up to create a light dressing that is slightly sweet and perfectly complements the flavors of the vegetables and other ingredients.
Tips & Tricks
- After mixing your salad, let it sit in the refrigerator for a few hours so the flavors meld. The lemon juice will also soften the raw vegetables a bit as the salad sits.
- The Whole Foods version of this Detox Salad included vegetables that were chopped in very small pieces. We prepped our salad with slightly larger, but still bite-size pieces – just so the salad stays fresher a little longer. (Chop the veggies in whatever size you prefer.)
- As written, this salad makes a generous amount – so it can be enjoyed for a few days, or bring to a potluck or cookout as a healthy menu option. Feel free to cut the quantities back to make a smaller portion or chop the vegetables but hold off on adding the dressing to keep them fresher for longer.
