- Cheese – Our recipe includes Sharp Yellow Cheddar and White American Cheese, however the yellow cheddar could be replaced with white, and white American replaced with yellow American. You can also swap in other varieties of cheese if you’d like.
- Seasonings – Kosher salt, black pepper, garlic powder and red pepper flakes add a nice savory flavor and a touch of heat that helps cut the richness of the beef mixture.

Cheesy Sloppy Joes combine seasoned ground beef, green bell peppers, onions, and two kinds of cheese in a crusty sub roll.
Ingredients
1 tablespoon extra-virgin olive oil
1 large green bell pepper diced small, about 1 1/4 cups
1 medium sweet onion, diced small, about 1 1/4 cups
2 pounds lean ground beef such as 90/10 or 93/7, beef to fat ratio
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon garlic powder
Pinch red pepper flakes
2/3 cup tap water
12 ounces sharp yellow cheddar cheese, shredded
12 ounces white American cheese, cut up
6-pack small sub rolls
Instructions
- In a large skillet or braiser, heat olive oil over medium high and once hot, add peppers and onions and saute for two minutes.
- Add ground beef, salt, pepper, garlic powder and pepper flakes and cook beef to brown. Do not drain.
- Add water, shredded cheddar and cut up American and reduce heat to medium.
- Stir and cook. The cheese will melt into the beef and water and the mixture will become creamy.
- Cook slowly until the water evaporates and the mixture thickens. When lifted out with a spoon, the beef mixture should stay firm and not run off. This slow cooking process should take about 10-15 minutes. Be careful not to let it get too thick and stick. If it is too thick, simply add a little water to thin.
- Remove from heat, spoon into cut sub rolls and serve.
- Dinner in 30 minutes.
