My husband Jack and I are always up for a good recipe challenge! So we were thrilled to be asked to partner up with the folks at RiceSelect and SheKnows to develop a recipe showing you a new and different way to cook with rice! Rice is way more than just a boring side dish – and these incredible Buffalo Chicken Arancini are a perfect example of that.
We’ve taken two delicious recipes – spicy pulled buffalo chicken and the Italian classic called Arancini – and combined them into one amazing new dish: Buffalo Chicken Arancini. Arancini are stuffed Arborio rice balls that are breaded and fried. Our updated classic is served with some blue cheese dipping sauce (the perfect complement to the spicy chicken) celery sticks, and more Buffalo sauce on the side.
