Fruit and Cucumber Salsa

Yield: 2 1/2 cups 1x

  • 1 1/2 cups chopped fresh fruit, such as peeled peaches, nectarines, pears, or plums
  • 1 cup chopped, seeded cucumber
  • 2 tablespoons thinly sliced scallions (green part)
  • 1 tablespoon sugar
  • 1 tablespoon canola oil
  • 1 tablespoon apple cider vinegar


  1. Combine all ingredients in a bowl.
  2. Cover and chill for 1 to 2 hours before serving.
  3. Serve alongside our Peanut Ginger Chicken.
