Creamy Italian Pasta Salad

Creamy Italian Pasta Salad is loaded with pasta, Italian meats, cheese, and vegetables – all tossed in a creamy Italian dressing. So good!

Ingredients

1 cup of our Creamy Italian Dressing

1/2 cup additional mayonnaise

8 ounces dry cavatappi pasta, or your favorite pasta shape

1/4 prosciutto, sliced and cut into bite-sized pieces

1/4 pound hard salami (purchase a small, packaged stick. Peel off the outside skin and cut the stick into bite-sized pieces)

1/4 pound any thick cut ham cut into bite-sized pieces (we bought a small pre-packaged black forest ham)

2 ounces pepperoni sliced and cut into quarters

1/4 pound sharp Provolone cheese, sliced thick then cut into bite-sized pieces (you can usually find small quantity pre-packaged unsliced Provolone cheese in the cheese aisle)

1 eight-ounce tub mini mozzarella pearls, drained

4 ounces mini cucumber, peeled and sliced

1/4 cup red onion, sliced thin

1/2 orange bell pepper, sliced into bite-sized pieces

1/2 green bell pepper, sliced into bite-sized pieces

1/2 cup drained chickpeas

1 small jar artichoke hearts, drained and cut into bite sized pieces

1/4 cup sliced pepperoncini, drained

1/2 cup pitted black olives, drained (we like Pastene brand)

1 cup grape tomatoes (cut any large ones in half)

1/4 cup fresh Italian flat leaf parsley, chopped fine


Instructions

  1. Make the dressing and measure out one cup in a small bowl. Add ½ cup additional mayonnaise and set aside. Reserve the remaining dressing for other recipes.
  2. Cook the pasta in boiling salted water until al dente. Drain in a colander and run cold water over it to cool. Drain fully and pat dry with paper towels to remove any excess water.
  3. In a very large bowl place prosciutto, salami, ham, pepperoni, provolone, mozzarella, cucumber, onion, bell peppers, chickpeas, artichoke hearts, pepperoncini, olives, tomatoes and parsley.
  4. Add drained and dried pasta and toss to combine.
  5. Add dressing and toss to even coat all of the salad ingredients.
