Cheesy Ham and Rice comes together quickly in a skillet, then bakes in a casserole until the cheesy topping is melted. This is a meal the entire family will love!

Yield: 6 servings
Prep: 25 minutesCook: 20 minutesTotal: 45 minutes

Ingredients

2 tablespoons extra virgin olive oil

2 tablespoons butter

1 cup uncooked Basmati or Jasmine rice

½ cup sweet onion, diced

1 cup red bell pepper, diced

1 small bunch of scallions, sliced (tops and bottoms separated)

1 teaspoon fresh garlic, minced

1 teaspoon fresh thyme, or half that of dried

½ teaspoon white pepper

¼ cup white wine

1 ¼ cups vegetable broth

1 cup heavy cream

1 ½ cups leftover ham, cut into bite sized pieces

1 ½ cups sharp white cheddar cheese, divided

½ cup grated Parmesan cheese

Instructions

  1. In a heavy oven-proof skillet, or medium pot or Dutch oven, melt butter in oil over medium high heat and add rice.
  2. Cook rice, stirring often for three minutes.
  3. Add onion, bell pepper and scallion bottoms and stir and cook three more minutes.
  4. Add garlic, thyme and white pepper and cook one minute.
  5. Add wine and cook one minute to deglaze.
  6. Add stock and cream and heat to boiling. Cover and reduce heat to low and cook about 12 minutes or until rice is tender. If the liquid has absorbed and the rice is not yet tender, add a little more stock, cream or water.
  7. Remove from heat and stir in the ham and one cup of the cheddar cheese.
  8. If using an oven proof skillet, top with the remaining cheddar and the Parmesan and broil for a few minutes to brown. If using a casserole dish, pour mixture into casserole dish, cover with remaining cheddar cheese and Parmesan and brown.
  9. Top with scallion tops and serve.
