2 pounds 16/20 peel-on, de-veined, uncooked shrimp

2 lemons

Cocktail Sauce


Instructions

  1. Thaw the shrimp under refrigeration, not at room temperature.
  2. Hold each piece with the cut facing you and using two thumbs, fold back the shell. Then break it off just under the tail, leaving the tail piece intact.
  3. Freeze the shells for future fish stock or discard.
  4. Bring a six-quart pot of water to a boil. Cut a lemon in half and add to the boiling water.
  5. Have a bowl of ice water and a colander standing by.
  6. Plunge half the shrimp in and move around with a spider or strainer.
  7. They will turn from opaque to white in about 1 ½ to 2 minutes. They will be cooked before the water comes back to a boil.
  8. Use the spider to remove the shrimp to the ice water bath and let them sit in the cold water for two minutes, then remove to the colander with the spider. Place into a bowl or platter and refrigerate.
  9. Once the water is back to a boil, repeat with the remaining shrimp.
  10. When ready to serve, lay out ice on a platter or bowl, top with shrimp and have the cocktail sauce close by or in the center of the shrimp platter.
  11. Decorate the bowl or platter with lemon wedges and serve.
