Easy Banana Muffins - A Family Feast

Easy Banana Muffins

Ingredients

4 medium ripe bananas (three mashed totaling 1 1/2 cups and one sliced for topping)

1/2 cup neutral oil such as grape seed or canola oil

1 cup granulated sugar

2 whole large eggs

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1/4 teaspoon salt

Non-stick cooking spray

Butter or cream cheese, for serving


Instructions

  1. Preheat oven to 350 degrees F.
  2. Line a 12-cup muffin tin with regular muffin papers. Then line each of those with a tulip paper and spray the inside of each with kitchen pan spray.
  3. In the bowl of a stand mixer with paddle attachment, beat three of the bananas until mashed.
  4. Add oil and sugar and beat for one minute on medium.
  5. With mixer running on low, add one egg at a time and incorporate first egg before adding the second. Scrape bowl and beat again.
  6. In a separate bowl, mix flour, baking soda, baking powder and salt.
  7. With mixer running on low, slowly add the dry ingredients.
  8. Scrape and mix to incorporate.
  9. Using a scoop, divide the batter between the 12 tulip papers.
  10. Slice 12 slices off of the fourth banana and place a slice over each filled cup.
  11. Bake for 30 minutes, rotating pan half way through, or until a toothpick inserted into the center of a muffin comes out clean.
  12. Cool on a rack or serve warm with butter or cream cheese.
