Cowboy Butter - A Family Feast

Cowboy Butter

Cowboy Butter combines melted butter with lemon, garlic, mustard, and a variety of herbs and seasonings. It’s an incredibly delicious condiment or dip!

Ingredients

1 cup salted or unsalted butter (2 sticks)

2 tablespoons freshly squeezed lemon juice

Zest from half a lemon

2 garlic cloves, coarsely cut up

1/2 cup shallots, coarsely cut up

2 tablespoons Dijon mustard

1 tablespoon prepared horseradish

3 tablespoons fresh flat leaf parsley, coarsely cut up

1 tablespoon fresh thyme, coarsely cut up

1 tablespoon fresh chives, coarsely cut up

1/2 teaspoon Worcestershire sauce

1/2 teaspoon sea salt or kosher salt

1/2 teaspoon freshly ground black pepper

Pinch of ground cayenne pepper


Instructions

  1. Place butter into small saucepan and melt slowly over low heat. Remove once melted and pour into a small mixing bowl.
  2. Place all other ingredients into a small food processor and process to a fine paste consistency.
  3. Add processed ingredients to the melted butter and whisk to combine.
  4. Serve melted and used as a dip or brushed on foods. Or refrigerate slightly and use as a spread. Or (finally) chill to a solid then melt halfway and whisk to a creamy consistency as we show in our photos. Dip foods or brush on before serving.
