Chicken Lazone - A Family Feast

Chicken Lazone

Chicken Lazone has juicy and tender seasoned boneless chicken in a luscious cream sauce. Serve it over pasta for a quick weeknight meal or a special dinner party.

Ingredients

12 ounces dry spaghetti

4 similar-sized boneless skinless chicken breast halves, about 68 ounces each

1 teaspoon sea salt (or kosher salt)

1 teaspoon chili powder

1 teaspoon onion powder

1 teaspoon garlic powder

1/4 teaspoon cayenne pepper

1 teaspoon paprika

1 teaspoon dry oregano

6 tablespoons butter, divided

1 cup shallots sliced

1/4 cup white wine

2 tablespoons all-purpose flour

3 cups heavy cream

1/4 cup grated Parmesan cheese

1/4 cup fresh flat leaf parsley, chopped


Instructions

  1. Start the water for the spaghetti and cook per box directions. If it is cooked before the chicken is done, pour into a colander to hold.
  2. Butterfly the four chicken breasts so they are even in thickness but do not pound.
  3. Mix the salt, chili powder, onion powder, garlic powder, cayenne pepper, paprika and the oregano in a small bowl.
  4. Sprinkle both sides of each chicken breast with the spice mix.
  5. Place four tablespoons of the butter into a large skillet over medium heat. Once melted, place the seasoned chicken in and cook for 2-3 minutes on each side to brown. The chicken will not be fully cooked at this stage. Remove to a platter.
  6. Put in two more tablespoons of butter and once melted, add shallots, and cook for three minutes, keeping heat at medium.
  7. Add the wine to deglaze.
  8. Once the wine has evaporated, add the remaining two tablespoons of butter, and once melted, add the flour, and cook for three minutes, stirring often.
  9. Add the heavy cream and Parmesan cheese and stir to combine.
  10. Nestle the chicken back in and cook on medium heat until the chicken is cooked through, about 2-3 more minutes once bubbling. (Spoon the sauce over the top and flip the pieces over a few times to get fully coated) You can test for doneness by slicing open the side of one piece to check or put a probe thermometer into the chicken and check for 160 degrees F.
  11. Place the heated drained spaghetti onto a serving platter and top with the four cooked pieces of chicken. Spoon sauce over the top and serve with additional sauce on the side.
  12. Sprinkle chopped parsley over the top of the platter plus over each portion.
