Ingredients

White rice if using

1 cup Japanese BBQ sauce, make your own with this recipe or buy here

1 1/2 pounds ground turkey (look for a higher fat ratio for better flavor)

2 teaspoons finely grated garlic

2 teaspoons finely grated ginger

1 small bunch of scallions, 1/2 cup of whites minced fine and separated from greens

1/2 cup Panko Japanese bread crumbs

1 whole egg

1 tablespoon sesame oil

1/2 teaspoon white pepper

3 tablespoons neutral oil such as safflower, canola or grapeseed oil

Instructions

  1. Place BBQ sauce into a small nonstick sauce pan, bring to a boil, then lower heat to low and reduce the sauce to 2/3 cup. Remove and set aside. Be careful when reducing, sauce will foam up and if the heat is not on low, it will bubble over.
  2. If serving with rice, cook that now.
  3. In a large bowl, combine ground turkey, grated garlic, grated ginger, ½ cup minced scallion whites, Panko bread crumbs, the egg, sesame oil and white pepper.
  4. Use a one-ounce scoop and scoop 36 meatballs onto a tray, then with wet hands, roll each into a ball.
  5. In a very large skillet or braiser, heat the oil over medium heat and add meatballs. Use two soup spoons to gently flip and brown all sides, about 8-10 minutes.
  6. Add the reduced BBQ sauce and once hot, lower heat to medium low to low and cook and turn the meatballs so that they absorb and get coated with the sauce, about five more minutes. If the BBQ sauce is too thick, dilute with a spoonful of water as needed.
  7. Once cooked, remove and serve over optional rice and top with minced scallion greens.
