Whole Foods Copycat Detox Salad

Our chopped Detox Salad tastes just like the version served on the salad bar at Whole Foods Market. It’s also a great way to eat more veggies!

Ingredients

For the Salad

3/4 pound fresh peeled carrots, shredded

3/4 pound broccoli, cut into very small florets

3/4 pound cauliflower, cut into very small florets

1 cup raisins (regular or golden)

1/2 cup sunflower seeds

2 tablespoons fresh parsley chopped fine

2 tablespoons lemon juice

Zest from one lemon

1/2 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

For the Dressing

1/2 cup raisins

1/4 cup sunflower seed oil, or grapeseed oil, or any other neutral oil

1/2 cup water


Instructions

  1. Place all the salad ingredients into a large bowl.
  2. Place dressing ingredients into a small food processor and puree until smooth. Or use an immersion blender or regular blender and puree until smooth.
  3. Toss dressing with salad and refrigerate for two hours to meld flavors. Can be served right after mixing if desired.
