Weekday Triple Play: Cabbage Blend

This recipe, as written, will give you enough Cabbage Blend to make all three Weekday Triple Play meals. If you want to make just the Beef and Cabbage Stir Fry – make a total of 7 2/3 cups of the cabbage blend. (5 cups green cabbage, 2 cups Chinese cabbage, a little shredded carrot and 2/3 cup green onions.) If you want to make just the Beef Calzones – make a total of 2 cups of the cabbage blend. (1 cup green cabbage, 3/4 cup Chinese cabbage, a little shredded carrot and 1/4 cup green onions.) If you want to make just the California Slaw – make a total of 4 cups of the cabbage blend. (2 cups green cabbage, 2 cups Chinese cabbage, a little shredded carrot and 1/3 cup green onions.)

Ingredients

  • 7 cups shredded green cabbage
  • ½ cup shredded red cabbage
  • ½ cup shredded carrots
  • 4 cups shredded Chinese cabbage
  • 1 cup scallions (or green onion), cut into ½ inch diagonal slices

Instructions

  1. Mix all ingredients together to combine.
  2. Set aside 4 cups of the cabbage blend in a container for the California Slaw and refrigerate.
  3. Proceed to the Beef and Cabbage Stir Fry recipe for meal #1 of this series.
