Watermelon Berry Smoothies (and Popsicles) - A Family Feast

Keep frozen fruit on hand this summer – then make our delicious Watermelon Berry Smoothies (and Popsicles too!).

Ingredients

1 cup raw cashews, see note*

3 cups trimmed and cubed watermelon

3 cups frozen fruit such as strawberries, raspberries, blackberries, mango, peaches, etc.

1 cup whole fat Greek yogurt, see below

1/4 cup agave nectar

Instructions

  1. Soak cashews in one cup of water for at least four hours.
  2. Drain and discard cashew water and place cashews in blender along with watermelon.
  3. Puree until smooth, about one to two minutes depending on your blender.
  4. Add other ingredients and puree until smooth.
  5. To make popsicles, pour mixture into popsicle molds and freeze until firm (several hours.)

Notes

*Note: you can make this dairy free by doubling the cashews and eliminating the yogurt. Conversely, you can make it nut free by doubling the yogurt and eliminating the cashews.
