Ingredients

2-pound head of cauliflower (after core removed, about 1 1/2 pounds florets)

1 cup mayonnaise

1/4 cup drained horseradish (reserve liquid)

1 tablespoon spicy brown mustard

1/4 teaspoon your favorite hot sauce

1/2 teaspoon freshly ground black pepper

1 teaspoon paprika

1/4 cup freshly grated Parmesan cheese

2-3 tablespoons panko bread crumbs

Sauce

2 tablespoons mayonnaise

1 teaspoon reserved horseradish liquid

Instructions

  1. Preheat oven to 350 degrees F with rack in top third of oven.
  2. Line a sheet tray with parchment paper.
  3. Cut cauliflower into florets.
  4. In a large bowl, whisk mayonnaise, drained horseradish, mustard, hot sauce, pepper, paprika and Parmesan cheese.
  5. Add cauliflower and toss to coat.
  6. Lay out cauliflower, not touching each other, on the prepared sheet tray, and sprinkle on the panko just to slightly coat each piece.
  7. Bake 40-45 minutes or until tender, turning pan half way through.
  8. While baking, mix the two tablespoons of mayonnaise with a teaspoon of the reserved horseradish liquid and set aside.
  9. When the cauliflower comes out of the oven, serve with the sauce drizzled over the tops.
