Soft Honey Sesame Pretzel Rolls

Ingredients

  • 1 1/3 cups whole milk, warmed to between 105 and 110 degrees F
  • 1 cup water to between 105 and 110 degrees F
  • 1 tablespoon honey
  • 2 teaspoons dry yeast
  • 1 1/2 tablespoons butter, melted
  • 1 1/2 teaspoon kosher salt
  • 3 cups bread flour
  • 1 1/2 to 2 cups all-purpose flour
  • Olive oil to grease bowl
  • Flour for dusting the counter

Boiling liquid

  • 2 quarts water
  • 2 tablespoons honey
  • 3 tablespoons baking soda

Topping

  • Sea salt to sprinkle on tops before baking
  • Sesame seeds to sprinkle on tops before baking

Instructions

  1. In the bowl of a stand mixer with paddle attachment, place warm milk, warm water, honey and dry yeast and mix to combine. Let sit for about five or more minutes until foamy.
  2. Add butter, salt and bread flour and mix to combine.
  3. Switch out the paddle for a dough hook and slowly add all purpose flour with mixer running on low until the dough pulls away from the bottom of the bowl. (You may not need all two cups of AP flour). Knead either in the mixer or by hand on the counter for four minutes.
  4. Oil a large bowl and place in dough. Roll the dough so it gets covered in oil, cover bowl with plastic then a kitchen towel and let sit in a warm place for 1-2 hours or until doubled in size. (Ours doubled in one hour).
  5. Transfer to a floured counter and divide into 12 equal balls trying not to deflate the dough too much.
  6. Rather than rolling into a ball, take each piece of dough and pull the sides to the bottom and pinch closed, again trying not to deflate too much.
  7. Cover with a towel and let rest 15 minutes.
  8. While dough balls are resting, fill a medium to large skillet with high sides with the two quarts of water, honey and baking soda.
  9. Preheat oven to 425 degrees F. Move two racks to middle and top third.
  10. Place a few kitchen towels on counter next to stove.
  11. Place about three or four dough balls in the boiling water and cook 1 ½ minutes on each side. Use a spider or strainer and remove to the kitchen towels. Repeat for all 12 rolls.
  12. Line two sheet pans with parchment paper and spray with pan spray. After each batch is boiled and the bottoms dried on the kitchen towels, place six on each sheet pan. (Really make sure the bottoms of the rolls are dry before placing on sheet pan or they will stick. The tops can stay moist)
  13. Cut an X on top of each dough ball with a sharp knife about an eight of an inch deep.
  14. Sprinkle each roll with sea salt and sesame seeds.
  15. Bake for about 15 minutes or until golden brown.
  16. Remove immediately from parchment and place on wire racks to cool.
