Low Carb Deli Lunch Spread - A Family Feast

Carb-Conscious Deli Lunch Spread

Ingredients

For Turkey-Wrapped Asparagus Spears

  • 1 pound fresh asparagus spears
  • 1 8oz. package HORMEL® NATURAL CHOICE® Oven Roasted Deli Turkey

For Salami and Cream Cheese Stuffed Cherry Tomatoes

  • 1/2 of a 6-ounce package HORMEL® NATURAL CHOICE® Uncured Hard Salami
  • 4 oz. cream cheese, softened
  • 1/4 cup chopped scallions
  • 12 large cherry tomatoes

For Salami-Wrapped Cheese Sticks

  • 1/2 of a 6-ounce package HORMEL® NATURAL CHOICE® Uncured Hard Salami
  • 6 Colby Jack cheese sticks

For Turkey Pinwheel Bites

  • 1 8ounce package HORMEL® NATURAL CHOICE® Applewood Smoked Deli Turkey
  • 1 5ounce package soft spreadable garlic and herb cheese (such as Boursin)

For Honey Ham-Wrapped Cantaloupe

  • Half a small cantaloupe, peeled and cut into slices
  • 1 8ounce package HORMEL® NATURAL CHOICE® Honey Deli Ham
  • Small skewers or toothpicks

Instructions

Assemble each as follows and place on a serving tray or platter:

For Turkey-Wrapped Asparagus Spears

  1. Fill a medium pot with water and bring to a boil over high heat. While water is heating, clean asparagus and cut the tough ends from ends of each spear.
  2. Blanch asparagus spears in boiling water until just tender (about 2 minutes), then immediately plunge asparagus into an ice water bath to stop the cooking process. Drain asparagus and dry well on paper towels.
  3. Wrap 3 asparagus spears in one slice of HORMEL® NATURAL CHOICE® Oven Roasted Deli Turkey. Repeat using the remainder of the asparagus spears.

For Salami and Cream Cheese Stuffed Cherry Tomatoes

  1. Cut 10 slices of HORMEL® NATURAL CHOICE® Uncured Hard Salami into quarters. Place into a food processor and pulse until very finely chopped. Remove chopped salami to a small bowl.
  2. Add softened cream cheese and scallions to the bowl with the salami and stir to combine.
  3. Using a small paring knife, cut cores out of each cherry tomato and remove seeds.
  4. Place cream cheese and salami mixture into a piping bag fitted with a large star tip and pipe into the tomatoes.

For Salami-Wrapped Cheese Sticks

  1. Wrap 1 slice of HORMEL® NATURAL CHOICE® Uncured Hard Salami around each cheese stick.

For Turkey Pinwheel Bites

  1. Lay flat 8 slices of HORMEL® NATURAL CHOICE® Applewood Smoked Deli Turkey on a cutting board. Evenly divided the soft cheese spread among each slice of turkey. Using a knife, spread cheese evenly over turkey.
  2. Roll the cheese-covered slice of turkey tightly, then cut into 1-inch bites and place on side.

For Honey Ham-Wrapped Cantaloupe

  1. Cut each slice of cantaloupe in half.
  2. Fold slices of HORMEL® NATURAL CHOICE® Honey Deli Ham in half, then wrap around each slice of melon and secure with a skewer or toothpick.
